    Directions

    The tomatoes and corn in the garden are ripening! Here's a simple, fresh salad with a delicious, easy-to-make dressing. Enjoy!

    Step1

    Husk corn, wash and carefully cut the kernels off of the cobs.

    Step2

    Preheat a skillet on medium heat. Add a tablespoon of olive oil. Sauté corn for 4-6 minutes. Allow corn to completely cool.

    Step3

    While the corn cools, prepare the dressing. In a small bowl, mix 3 tablespoons of balsamic vinegar, 2 tablespoons of extra virgin olive oil, and 1 minced garlic clove. Add salt and pepper to taste, then stir well.

    Step4

    Add the cooled corn to a large bowl. Next chop lettuce, parsley and tomatoes and add them to the bowl.

    Step5

    Add dressing to the salad and toss everything together. Serve and enjoy!
